Low Fat, No Bake Mini Cheesecakes


Have I told you how much of a sweet tooth I have?

Well if not let me fill you in. I’m in love with anything and everything sweet and if you are like me, this recipe is for you!

Plus is super quick and there is no baking involved!


Unfortunately, I’m going to be a bad blogger and not show you any of the processes photos since it was that quick!

You’ll need:

  1. Blender
  2. Mini cupcake pan



2 blocks of low-fat cream cheese

1 can of La Lechera fat-free condensed milk

1 box of Keebler Graham crust

1 cup of any low-fat butter or even coconut oil



  1. Mix the cream cheese and condensed milk.
  2. Melt butter and mix with Graham Crumbs
  3. While the cream cheese and condensed milk mix completely start setting the crumbs in the mini cupcake pan.
  4. With a small spoon pour mixture  in the pan
  5. Set for 2 hours


And that’s it!

Easy right! The best thing they are delicious and “considered” low-fat!

You like that trick, so you can eat it during the week when your toddler is driving you up the wall accompanied with a great cup of coffee!

Box Cake Hack


We love cupcakes and even more when its an easy cupcake recipe.

Homemade recipes are wonderful but we don’t always have the time to sift the flour.

So if you feel the same way keep on reading.


This recipe is so simple that I kind of feel silly posting it but it is something that I get asked a lot. It’s very simple yet many people don’t do it, but I guarantee you that if you make this subtution you too will have people thinking you are a master baker. (wink wink)

This can be done with your favorite brand of box cake mix. To me, it all depends on what’s on sale that day, honestly. Whether Betty or Duncan your outcome will be the same and it will taste amazing.

Whats’s the hack?
Substitute the oil for butter, cold butter and add a teaspoon of vanilla and that is.
The cold butter makes the cupcake taste moist and full of deliciousness and the vanilla just kicks it over the top.
Bake it as you normally would and put it in a pretty paper liner and don’t tell anyone your secret.
I love to make Italian Merengue, but again it takes time and multiple steps and for a Wednesday afternoon its definitely too much. So we used the regular icing but made it in to a yummy looking ganache by taking the aluminum off, completely, and putting in the microwave for 15 seconds.
The icing comes in shiny, beautiful and really yummy.
We dipped the cupcakes in the icing container.
No mess, no spatula, or the little cool knife that bakers use to spread icing.
Sprinkle sprinkles . and call it a day!

And the best thing, this little cutie ate it all up!

A bath was required after, of course!

The truth behind our Cupcake Home and a Macy’s Free Special event

The truth is: I’m a horrible cook.
 No lie there.
 I can’t cook for my life. 
Even my water burns.
I have tried it multiple times and it just doesn’t happen. Don’t get me wrong I try to cook everyday  and some days is good and other day is just plain bad.
 My poor husband pretends that the food is actually good but Bella tells me “mama all done”
Well thanks hon 🙂
Now, when it comes to baking is a whole different story. Baking is a set recipe, is something decadent and no matter what sugar always tastes good, even burnt. I can follow any recipe and it always turns out so so good!
 One dish that I can actually cook is lasagna (does it count since is baked?) but it is all thanks to my mother in law who stood by me, teaching me the recipe and it turns out so good every single time.
If you are anything like me and you have to learn from an actual person Macy’s has got your back.
This coming Saturday, January the 28 at 3 pm in Macy’s in Galleria Houston will be hosting the Culinary Council in which chef Bryan Caswell will throw it down in the kitchen with some game day dishes to prepare us for the big game.
 He will be sharing some tips and tricks, and I know I can use all the help I can get.

Chocolate Coffee Cranberry Cake

Happy Christmas week my loves,

Today I want give you one of my favorite recipes. A chocolate coffee cranberry cake.

You read right!

The 3 “C” cake is one of the best and easiest cakes ever.

I made two of these as Bella also loves cake, but we choose to not give her caffeine if you get what I’m saying. Girlfriend doesn’t really need it, like ever, but it it was a big hit with everyone.

Like almost every other cake I do I love to use box cakes, I know most people have mixed feelings about them but I love them. I shared my secret before to making them taste like a homemade cake here, and this recipe is not much different.


Follow the instructions on the box and remember to switch the oil for cold butter and add a pinch of vanilla. To make the adult version of this cake use 2 tbs of your coffee and mix before baking. This time around I used Hills Bro Cappuccino Double Mocha and bake.

Guys, if you love the smell of coffee, this is the cake for you!

Once done I added some fresh, washed cranberries, we gave it a little sugar dust and viola!




Doesn’t it look beautiful? Well, it tastes amazing too.

Weekend Recap

Hey Guys! Hope you all had wonderful weekend! I know we did except the part were I go super sick.
We had a few plans for the weekend and are happy to report most of them actually got done. The most important being our family pictures. We finally got them done a year and a half later and I could not be happier with the results.


I wish we had got them done earlier but it never happened. Honestly my fault and I can be sure that next pregnancy and baby it will be done completely different.

But it got check of our list with only 3 hours of sleep from Friday to Saturday. How fun!
  I will post picture on Wednesday.

After the pictures we got a quick lunch and headed home. We had to go get the hubbys care from the mechanic and I heard this podcast all the way back! I love their story and follow them on Instagram through the whole adoption process.
Last minute we decided to have a small family dinner at the house with the in laws and after a market run we were set.
Oh and guys quick tip.. Swim diapers are only for the pool.
We had planned to go to the pool after picking up the car and decided last minute to run to the store and lets just say Bella did a nice little number in the shopping cart while we were leaving. We had a nice little track of pee all the way to the car. Oh man this first time mom thing never ends.
But got her changed and finally made our way to the pool for a whole 45 minutes because this heat is just too much to handle.

So after a few more freckles for me,two really nice tans for daddy and Bella  and two snow cones (YUM) we headed home.
Took showers and took a very long nap.
And because no dinner is done without a tasty little dessert I made a quick little run to the store again to pick up some  cookies and ice cream and made delicious little treats!
Even better I added a few little toppings around  them and lets just say we finish the whole pack of  cookies!

On Sunday we went to church and I was too lazy to take a picture after lunch. I feel asleep at 3:00 and didn’t wake up until 9 thanks to my amazing husband and mom that took Bella.
Woke up to take some medicine, work on a blanket and went back to sleep.
So the weekend finally caught up to me and lets just say my body feels it today.
All in all it was a great weekend and as always anytime we spend time together is a WIN in my books!
