Easy Coffee Tres Leches

If there is something I love, it is making dessert, as many of you already know! Cooking takes a little more effort but there’s something about making a dessert that takes me to my happy place. Now, being pregnant and cooking is another thing, whether making dessert or not, so I’ve come up with a few shortcuts to make the things I love on little time. Great for the holidays, right!?  Today I want to re-create one of my family’s favorites, one that they have been asking for a while, my coffee tres leches. In Cuba, we don’t have tres leches or condensed milk but both have been favorites since coming to the US. Making the actual cake for this recipe is one of the longest processes since it can’t be done on a stand mixer and must be done by hand, but this mama has figured out a way to skip a little of the process and enjoy a delicious cake around loved ones. Maybe this is why I love postres (desserts) so much, it brings our family around the table, eating something sweet paired with a delicious cup of coffee or hot chocolate. So are you ready for an easy and fast postre?

Here is what you need: 1 can of NESTLÉ® LA LECHERA® Sweetened Condensed Milk,  1 can of evaporated milk,  6oz of your favorite coffee, 1 small carton of heavy whipping cream, your choice of cake. *On this I have used regular store bought pound cake, pound cake, or if you have time you can use a homemade cake* All of these ingredients can be found at your local Walmart!

Directions:

Once you have the actual cake the process is pretty easy. Mix NESTLÉ® LA LECHERA®​ Sweetened Condensed milk, evaporated milk, whipping cream and coffee of your choice. Let this sit for about 20 mins allowing the coffee to give its flavor. While the 3 types of milk sit, poke holes in your cake to allow for max absorption. This is what makes the cake deliciously moist. Pour the milk mix into the cake pan and refrigerate for 30 minutes to 1 hour. You can do this while you finish getting ready or melting some NESTLÉ® ABUELITA​® for un chocolatico con leche. (hot cocoa) To top of your cake take out your hand mixer or stand mixer and whip out the whipping cream and spread over your cake. If you want to make it a little fancy add a few chocolate shavings to top your delicious cake. Now to the eating part! Of course, baby girl’s favorite part, if you know what I mean. Sitting with my people, enjoying a delicious Tres Leches cake with coffee or hot cocoa.

Easy Homemade Mashed Potato

This is not your typical holiday post because for us mashed potatoes are always a must but with Thanks Giving around the corner, well gosh next week. I wanted to share with everyone this easy mashed potato the whole family can enjoy and help in the progress!

To be honest this is probably the only thing I make for Thanksgiving. We buy our Turkey Dinner but somehow there is never enough mashed potatoes. I make these and my family loves them and devours them instantly! Without further ado, here is the recipe and the cutest little helper on a cold day!

 

 

Ingredients;

10 lbs bag of Potatoes

1 Land’ O Lakes Squeezable Spread bottles

1/2- 1 cup of Milk

Salt, pepper, and cheese to taste

Mashed potatoes are usually pretty easy, wash, rinse and boil but if you want to take make it one step faster, place half the potatoes in a bag and microwave for 6-8 minutes and done!

I decided to boil this set while I was tending my little helper but again it’s when you need it in a rush! Then, I placed all my potatoes in my stand mixer, added Land’ O Lakes Squeezable and milk. Land’ O   Lakes Squeezable Spread is so easy and fast for everyone, that my little helper had a little too much fun with it and asked to do it 5 times, and even added more to her own mashed potatoes.

A quick 5 minute lunch

It’s definitely been a while and I have missed this space so much! Starting next week I will be rolling out more posts and a lot more content, so stay a while!

But today I want to talk about a quick lunch I recently discovered since really we are all on the struggle bus. Not to mention the fact that I’m pregnant and I’m really ON the struggle bus most of the time!

I kid you not, I don’t remember being this tired with Bella. I’m working on a few diet changes because all I really want all day is a bed. But, back to the lunch, cooking has never been my forte but my people have to eat.

Ingredients:

Chicken

Mayo

Dijon Mustard

Salt

Apples

Crackers

Musco Family Pearls

You’ll need a roasted chicken from your favorite store, yes guys I hate cooking, you can also boil chicken breast at home if you are the cooking type! 😉

Shred the chicken. (another tip: put that chicken in the stand mixer for a few second and ta-da. Shredded chicken in secs, literally)

Mix in the mayo, salt and any other seasoning of your choice.

I love my fruit, so I usually add raisins or apples or even cranberries. I gives it an extra sweetness to it. I just love it!

My husband loves olives but Bella is not quite taken by them so I love having my Musco pearls on the side so my hubby can have it all. They come in little cute to go containers and are just delicious!

I’m packing a cup for the hubby for lunch too. Perfect and (easy) snack! Healthy too!

That’s it!

Take your chicken salad and you can eat it on a sandwich or with crackers.

And this quick chicken salad lunch also works as a great dip at your next party!

Truffles you’ll love!

 

You know that feeling when you try something new and just love it?! That happened to me on my first trip to Guatemala. I had the most delicious treats at the market and ever since then I have tried millions of ways to recreate them!

I’m happy to report that after a year, AHH, I have finally found the recipe to make delicious milk truffles and I’m sharing it with you right here, so you can enjoy it too, including the secret ingredient!

Ingredients:

2 1/2 cups of Powder Milk

1 can of La Lechera Condensed Milk

1 cup of Powder sugar

The Perfect Apple Pie for All of us Crust Lovers

Hey Guys!

Hope everyone is having a great day! Today I want to share a recipe for all of us crust lovers.  I’m not a pie person but give me any crust and I’ll go to town, I’m always a bit sad when I only get a small piece of crust, so I came up with an idea to get crust in every bite, with a pie I have called the destructed apple pie. The best thing about this pie is that you can make it from scratch or buy it from the store, I promise none will know!

So come let’s make some pie.

Ingredients:

Store bought apple pie, if you want to make your own Pinterest has great recipes

1 Nestle Media Crema

1 bag of Caramels

1 bags of Pecans

 

Directions:

  1. destruct the apple pie. Take off all the crust and put it on a baking sheet. Bake at 350 all the pie crust for 20 minutes. Very important BROIL for the last 6 minutes. Remember we all love a crunchy crust.
  2. Scoop up the filling and put on a cutting board. Cut the apple slices into dices. 
  3. In a pot melt the caramels and add Media Crema to get that smooth, delicious texture. The reason why I use Media Crema is that it has such a long storage life and it’s so easy to add a tbs or 2 on some homemade mac and cheese for a delicious savory dish.
  4. Now if you have a pretty bowl this is the time to use it. Place your chopped apples in the bowl, don’t worry about it looking pretty.
  5. Break up the crust once it’s a bit cooled off and added it to the bowl. Save one big piece for the end
  6. Add 2 tbs of the melted caramel and mix with apple and crust.
  7. Remember that piece of crust you saved, well now is time to cut it up and crumble on top of your pie.
  8. Add as much or as little pecans as you want and drizzle the remainder of the caramel on top. I had some caramel left over and I’m saving it to make caramel apples. 

The best thing about this pie is that it doesn’t take hours to make. If you are running late to a holiday party you can easily create the destructed apple pie in less than 30 minutes, and shhh, don’t tell anyone is store bought!
