A quick 5 minute lunch

It’s definitely been a while and I have missed this space so much! Starting next week I will be rolling out more posts and a lot more content, so stay a while!

But today I want to talk about a quick lunch I recently discovered since really we are all on the struggle bus. Not to mention the fact that I’m pregnant and I’m really ON the struggle bus most of the time!

I kid you not, I don’t remember being this tired with Bella. I’m working on a few diet changes because all I really want all day is a bed. But, back to the lunch, cooking has never been my forte but my people have to eat.

Ingredients:

Chicken

Mayo

Dijon Mustard

Salt

Apples

Crackers

Musco Family Pearls

You’ll need a roasted chicken from your favorite store, yes guys I hate cooking, you can also boil chicken breast at home if you are the cooking type! 😉

Shred the chicken. (another tip: put that chicken in the stand mixer for a few second and ta-da. Shredded chicken in secs, literally)

Mix in the mayo, salt and any other seasoning of your choice.

I love my fruit, so I usually add raisins or apples or even cranberries. I gives it an extra sweetness to it. I just love it!

My husband loves olives but Bella is not quite taken by them so I love having my Musco pearls on the side so my hubby can have it all. They come in little cute to go containers and are just delicious!

I’m packing a cup for the hubby for lunch too. Perfect and (easy) snack! Healthy too!

That’s it!

Take your chicken salad and you can eat it on a sandwich or with crackers.

And this quick chicken salad lunch also works as a great dip at your next party!
